Meat Market and Butcher Shop Development
We can help manage any size market development. We get this part.
Range was contacted to be the lead consultant for Standard Market, a 40,000 square foot chef-driven perishables store that opened its first location in 2011 in the Chicago suburb of Westmont, IL. Range was hired to help with the development and roll out of the store’s meat department. Standard Market wanted to differentiate itself in the market place through high-quality, moderately-priced scratch products made in-store. This concept requires extensive labor resources. The challenge at the meat case was to find ways to off-set these labor costs through product offering and assortment, innovative packaging and merchandising, and most importantly, exceptional customer service.
Based on our client’s needs, Range divided its work in to four key program areas: Product, Labor, Meat Department Set-up, and Meat Department Management. We successfully designed and implemented the following for Standard Market:
- Product Sourcing and Meat Specifications
- Item Product Files and Scan and Scale Code set-up
- Workflow Analysis and Labor Schedule
- Meat Case Schematics & Set Up
- Training: Pre, On-Site, Store-Level Training
