Range Meat Academy


Led by Range Certified Master Butcher and meat industry expert Kari Underly, Range Meat Academy is establishing training and education programs aimed at restoring the value, art, and sustainability of the butchery trade by offering the most comprehensive, standard based certification program in the industry. Training programs certify students in:

  • Meat merchandising
  • Safety and knife skills
  • Meat cutting
  • Whole animal utilization; beef, pork and lamb
  • Sausage and basic charcuterie

Blended Learning

RMA will offer four different certificate programs, all rooted in the “old-world” sustainable style of butchery with a flare towards today’s modern meat cutter. Students will learn all aspects of the trade from animal husbandry on the farm; to anatomy and myology; to cutting curing and sausage making, to merchandising and profitability.


The curriculum is designed to provide students with knowledge, skills and values that will set them apart within the meat industry.  Coursework will include a combination of blended online learning to classroom lectures, demonstrations, field trips, hands-on lab work, webinars and the opportunity to take a hands on certification exam.
