Clerk Curriculum
Kari Underly created the Range® Meat Clerk curriculum to train and develop current employees, potential hires, or job seekers. With this in mind, Meat Clerk comprises 16 lessons designed to give you the tools and confidence to provide your customer with a great experience at the meat case. Our comprehensive curriculum is divided into three manageable certificate courses. Furthermore, we cover poultry, lamb, pork, and beef.
We include courses on providing exemplary customer service and understanding basic meat knowledge, including characteristics of over 240 meat cuts. In addition, you will learn how to recommend proper cooking methods and substitutable cuts at the retail meat case or on the menu.

This includes characteristics of primals and subprimals and recognition of the various types of cuts in the meat case. In addition, you will learn how to use meat as an ingredient (slices, cubed, ground meats).

RANGE® MEAT CLERK CUTS & FEATURES CERTIFICATE (RMC201)
Cuts & Features include eight lessons. To begin with, we provide the student with a solid knowledge base regarding the identification of over 240 cuts in the meat case. The student also learns to merchandise the individual cuts associated with beef, pork, lamb, and chicken. Furthermore, students will understand cut attributes and recommend substitutable cuts and proper cooking methods.
COOKING METHODS & PREPARATION TIPS (RMC301)
RANGE® MEAT CLERK COOKING METHODS AND PREPARATION TIPS CERTIFICATE (RMC301)
Cooking Methods & Preparation Tips include three lessons. In short, you will learn to assist your customer in choosing and preparing the right cut. Specifically, you will be able to recommend proper cooking methods and suggest exciting flavor profiles. In addition, Meat Clerks will know how to suggest the rubs, pastes, and marinades that match the cut and cooking method.

The three certificate courses are Meat Essentials (5 lessons), Cuts & Features (8 lessons), and Cooking Methods & Preparation Tips (3 lessons). You must complete each lesson and pass a quiz before continuing to the next section.

Includes multiple-choice, true/false, matching, and visual cut identification questions. Contains sixteen 10-question quizzes and eighteen visual cut identification quizzes.
Students must achieve an 80% score on each quiz to move on to the next lesson and receive the three individual Range® Meat Clerk course certificates of achievement. At the successful completion of the three courses, students will earn a Range® Meat Clerk certificate.
